wedding reception for 80
Marie 07/10/16	Hello Ellen, I'm helping my niece with her wedding reception. It will be in the evening. Buffet style dinner. No alcohol. Mostly adults. Could you please check my amounts. Thanks! ( I did post earlier but you can disregard that because we changed the menu) appetizers: Fruit tray for 25 x 3 veggie tray 25 x 3 crackers 5 lbs. cheese 5 lbs. Maybe some chips and dip (not sure how much) DINNER: brisket 25 lbs raw (will be sliced ready to serve)(will probably have bbq sauce out) pork loin 25 lbs raw (will be sliced ready to serve) ham 25 lbs raw ( will be sliced ready to serve) green beans 2 # 10 cans baked beans 2 #10 cans potato salad 3 gallons Baked mac and cheese 10 lbs dry pasta mixed salad and dressing (5 x 2lb. mix bags) tomatoes (1- 2lb. pack of of grape tomatoes ) dressing (not sure how much of italian, ranch, french) rolls - 10 dozen cake and peach cobbler for dessert we may have a candy station set up tea sweet and unsweetened 2 gallons each punch 2 gallons water 2 gallons
ellen 07/19/16	Appetizers OK, maybe 5 pounds chips and 5 pints dips. brisket 25 lbs raw (will be sliced ready to serve)(will probably have bbq sauce out)- none left- have someone serve it round one pork loin 25 lbs raw (will be sliced ready to serve) ham 25 lbs raw ( will be sliced ready to serve), 16-18 OK green beans 2 # 10 cans-3 baked beans 2 #10 cans-3 potato salad 3 gallons-OK Baked mac and cheese 10 lbs dry pasta-OK mixed salad and dressing (5 x 2lb. mix bags)-OK tomatoes (1- 2lb. pack of of grape tomatoes )-OK, could do more dressing (not sure how much of italian, ranch, french) See plan for 100 salads and do 3/4 the amounts for 100 rolls - 10 dozen cake and peach cobbler for dessert- full sheet serves 60 we may have a candy station set up tea sweet and unsweetened 2 gallons each- 4 sweet, 2 plain punch 2 gallons- 5 if served with appetizers water 2 gallons - 4 Hope this is timely.
