I'm a food cart owner about to do my first really big gig (100 person wedding) and while I've got the quantities of food figured out, I'm a bit unsure about how to properly setup at the event. I'm renting a bunch of 8qt chaffing dishes but can't figure out what the maximum depth of hotel pan to use in these would be. This will effect how many hotel pans I need to get and also backup storage equipment needs.
