I read your mashed potato recipe in the big pots section, but was wondering about this. I make mashed potatoes using this great recipe that has a ton of butter, sour cream, half & half and cream cheese in it. You mash the potatoes and then put it a crockpot, refridgerate overnight and then the next day just set the crockpot on low for about 4 hours. It worked wonderful for Thanksgiving. Here's my dilemma. We are having to travel the Friday before Christmas and will not be home till Christmas eve (Sunday). I am hosting Christmas dinner (Monday). Could I make the potatoes on Thursday or Friday? Would they still be good on Monday? |

I would freeze them, then put the FROZEN crockful in the refrigerator to thaw right before I left, and keep it in the fridge. It should be well thawed and ready to cook Monday. |
