We will be serving 30 ladies from a salad buffet. I don't know how much tuna or chicken we will need. We will have: Chicken Salad Tuna Cranberry Salad (with apples, celery, onion, & almonds) Green salad Cucumber salad Fruit Salad Bread sticks Cake I would appreciate your assistance. |

Chicken Salad- 5 quarts Tuna Cranberry Salad (with apples, celery, onion, & almond s)- 3 to 4 quarts, depends on the popularity of tuna in your are Green salad Do 1/3 the amount for 100 on the plan for 100 page salad section Cucumber salad- about 3 quarts Fruit Salad- 5 quarts, consider serving as a fruit tray so people can pick what they like, see the fruit tray page Suggest you add a an egg salad choice (2 quarts) orcottage cheese choice or shredded/cubed cheese choice for proteins for any non-meat eaters.
