Fundraisers flourish with more veg/salad and less meat. Will you tweak? Hot roast beef is a costly sandwich; if you are having meatballs also, what about hot turkey, or maybe sausage and peppers?? Would you add a colorful slaw such as the Mardigras slaw on this site? What about a cold marinated bean or veg dip, or possibly a hot bean dish? You would save money and have a more memorable feast. Also, are you planning the ziti with or without meat?

Ziti is without meat . The menu is what they want so sticking to it .

Here's the thing: without any salad or veg, your guests will make 4 sandwiches per pound. With slaw or salad and a veg, you will get 5 to 6 sandwiches per pound. The meat savings would more than cover the veg costs, and the plates would look better.

Part of your job description as chef is to at least walk them through the wiser alternative.

I would plan 40 roast beef sandwiches and 10 pounds of meat balls with 3 -4 quarts of sauce.

2 gallons potato salad
4 9x13 pans of ziti with 1 pound pasta and 1 quart sauce and 1/2-1 pound cheese per pan.
