Feeding a football team

We have been asked to feed a high school football team (70 people total) for a pregame meal buffet style. They have asked us to make a beefy red sauce/rigatoni choice and a chicken Alfredo/penne choice. We will also have garlic read, tossed salad and fruit.
Since we are having two choices, how much of each should we prepare?

Usually a beef/chicken split runs 3/5 beef to 2/5 chicken. plan 10 pounds dry pasta total, and do make one extra 1 pound pan meatless in case of any vegetarians.
The alfredo style sauce on this site holds well.
