Fresh Cranberry Relish

The directions for your recipe does not mention what to do with the cinnamon and orange zest/marmalade. Can you explain?

Fresh Cranberry Relish for 100

1/3 cup serving, makes about 10 quarts
32 cups raw cranberries
8 pounds sugar, approximately
1 quart orange juice
1 quart water
5 sticks cinnamon
scant 1/2 cup orange peel zest OR 1 cup orange marmalade

Combine sugar and water and juice in a large saucepan. Bring to a boil. Add cranberries and boil gently until skins burst, about 15-20 minutes. Do not overcook. Chill.

Argh! Put the cinnamon sticks in the simmering cranberries. Stir the orange zest or orange marmalade in when you take it off the heat. Thanks for the heads up!
