Im feeding 200 people buffet. The meat will be portioned controlled . The menu is Stuffed Pork Loin, Baked Chicken, mashed potatoes, green beans, rolls, tossed salad and pasta salad, and a dessert bar. Can you please help me with the amounts i need or how much per person? Please? |

I figure 1 pound raw boneless pork per 3 people plus 1 piece of chicken per person to be sure all guests get their first choices. Gravy or sauce or apple sauce is usual with pork, 4 gallons mashed potatoes, 35 pounds per 100, 3 pounds butter per 100 if no gravy green beans, 45 pounds ready to cook rolls, 12 pounds per 100 plus 3 pounds butter per 100. Get good rolls tossed salad, use plan for 100 page, do twice the amount for 100 pasta salad, 6 pounds dry pasta per 100 plus add-ins. Because you have no dish suitable for a vegetarian entree make sure this is vegetarian and rich. dessert bar, use the guide for dessert bars on this site.
