How are you Ellen, I would like do you help me...
we have buffet for a party of 200 people:
mixed greens
yellow rice
fresh cavatelli pasta
assorted roasted vegetable platters: roasted mushroom, sweet potatoe, string beans, asparagus
broccoli, cauliflower.
bbq chicken (small pieces)
carving: roasted turkey breast, roasted pernil (pork shoulder)
how many pound I need for this party...
please.

mixed greens (assuming salad) use plan for 100 table

yellow rice, 8 pounds dry per 100
fresh cavatelli pasta, tough estimate with rice, but about 1 pound per 6.

assorted roasted vegetable platters:
roasted mushroom, sweet potato, string beans, asparagus, broccoli, cauliflower.
You plan at least 1/2 pound ready to cook per person, I would go 10-12 ounces with the potatoes. You plan the mix, according to budget and availability. About 2 tablespoons olive oil per pound.

bbq chicken (small pieces)- one piece per person
carving:
roasted turkey breast,
roasted pernil (pork shoulder)
This is a little tricky because pork preference varies by communities. You want a total of 1 pound boneless per 3 people, or about 65 pounds meat (100 pounds bone in) but how you divide may vary-
