I'm planning to make saucy baked chicken breasts, loaded mashed potato casserole, fresh green beans with red pepper strips, Italian bread and brownies for a community meal for the homeless and low income. I'm having trouble figuring out quantities as far as how many lbs of potatoes, chicken and beans. I definitely don't want to run out. I will also be feeding the volunteers who help serve the food. Any ideas? |

Assuming 75. baked chicken breasts, 1 pound boneless per 3 loaded mashed potato casserole, 2 pounds raw potatoes per each 5 fresh green beans with red pepper strips,17 pounds ready to cook beans; 3 pounds red peppers Italian bread, 10 pounds brownies, 2 per person |
