| Tina Montoya 01/20/17 | Dear Ellen, My church is hosting a homeless shelter for approximately 230 individuals for two weeks. I am responsible for one of the dinners during that time frame. We plan to serve tri-tip steak, scalloped potatoes, green beans with almonds, salad, rolls and assorted cakes and pies. I used your measurement guidelines for all of the above, but I am getting a little concerned about my calculation for the tri-tip. I figured that we need approximately 90 lbs of uncooked meat. | ellen 01/26/17 | 90 pounds for sure, I would probably go for 105. Cook by low and slow to minimize shrinkage and also let stand at least 15 minutes after cooking before slicing. |
