I am cooking for 250 people. The facility only has a residential stove plus a commercial oven. Boiling water before baking rice is impractical. Would it be better to bake the rice in the commercial oven without pre-boiling the water or bake the rice, freeze and reheat at the event? |

Melanie, I have never been able to bake rice without boiling the water first. Reheating may be your only choice. However, depending on the menu, the quality of the rice may not be what you want- try it at home in a small batch. I also have not frozen and reheated instant potatoes. If you have time to make ahead, do the real freezable holdable recipe on site. If you do instant, do them at the time of the meal. |
