Are the quantities on the baked potato page for the number of people or servings? I need number of pounds of potatoes for 120 people - 120 servings. |

120 people is not 120 servings. The amount on the tables is correct to serve 100 people buffet style with seconds permitted; if plated they serve 110-120, depends on who is serving. For whole baked potatoes, be aware that the different sizes are sorted and packed by case, labeled 40's, 60's, 80' etc, so these depend on what SIZE you select. You will always have some loss before serving from bad spots, cooking explosions and other issues, so you always cook about 10% more than you estimate you will need. In your case, about 130 if everyone will have one The 40's are the really giant ones served at premium steak houses. |

I'm sorry. I meant 100 people - 120 servings. They will be served for lunch with Mexican Sea Breeze main dish salad with imitation crab. How many pounds should I use? It will be adults. Actually, I ordered yukon gold potatoes from a food co-op and they came in quite small. |

Then just sort through them to get about 110 as close as possible to the same size, or you will have a very bad time cooking all evenly, about 65 pounds. |
