Ive made francaise before but only for a dinner party, how much would I need for 50 people, we are also serving penne vodka, roasted potatoes, steamed veggies, eggplant rollatini, meatballs and sausage and peppers. |

It depends in part on how much of your other meats, For 50 people with 3 meats, aim for a total of about 30 pounds. Make your chicken cutlets about 4 ounces each so people can take one and also something else, since they will. |
