I'm catering a wedding this weekend for 145. We are doing a baked potato bar. I've not cooked this many potatoes before and am really nervous about trying the method of cooking them at 500 for 30 minutes then putting them into a cooler. Is this fool proof? I CANNOT mess this up. I don't want the potatoes to not be cooked when time to serve. |

Follow the method exactly, including all the preheatings of ovens and chests and hold times and it will not fail. if you have purchased very large potatoes, over 8 ounces, add 10 minutes to the oven time. |
