Ellen, you are a wealth of info! I am cooking for 80, buffet style rehearsal dinner. I am fairly confident in amounts when it is a plated meal, but not sure for a buffet. I will have someone serve the meat. Are these amounts close?
Pork tenderloin 40 #
Marbled mashed potatoes 30#
Mac and Cheese ( this is the south, it's a vegetable)7 1# boxes
Green beans with bacon 16# frozen
Brussel Sprouts roasted with grapes 16#
Parmesan tomato halves 100

Should I increase any of this since it is a buffet?
