Need a recipe to make peach crisp for 1300 1/2c Servings

A standard 9x13 pan cuts 12 servings, you are looking at acres and acres of peach crisp. If you make it in a standard rimmed 10x15 pan, you can get 15=16 servings per pan, you are still looking at many many sheets. What is your event, facility and oven situation?

A 10-15 pan uses about 3 pounds of fresh or frozen peach slices, so 1 pound serves about 5.

For each 3 pounds of peaches:
topping

1 cup all-purpose flour
1/4 cup plus 2 tablespoons granulated sugar
1/4 cup plus 2 tablespoons light brown sugar
1/2 cup rolled oats
7 tablespoons cold unsalted butter, cut into small pieces
1/4 teaspoon salt

filling

3 pounds peaches
1/4 cup cornstarch

Plus butter and sugar to coat the pan before flling.
