I need to make enough chicken and rice for 50 people this weekend! I usually do this for a small group, but not sure of the amounts for a larger one! I cook chicken breasts and shred the meat. Use the broth from the cooked chicken and water to boil rice. then as it is nearly boiled I add a jar of my homemade green salsa. (onions, garlic, peppers and tomatoes all diced in its juices. I believe I do 3 breasts and 3-4n cups uncooked rice, I believe that serves 8-10 people...? |

For 50 people, big servings, pretty heavy chicken, 20 pounds boneless skinless chicken, 10-12 pounds raw rice |
