Can you look my numbers over? I am figuring 65# of baked ham, 180 # of raw brisket, 4.5 cases or 576 pieces of 8 pc chicken. 40# of cooked glazed baby carrots, 16-#10 cans of green beans seasoned with my recipe, 140# of garlic mashed potatoes(done weight), 17 gallons of lemonade, 500 rolls. They will be drinking a lot and big farm boys.

Let's tweak these numbers. Also, when serving 400 you will need at least 4 serving lnes and each one staffed with a beef server, or it will be gone way too soon- people are greedy for beef these days. So have the chicken first in line, then ham, then served beef, on each line.

65# of baked ham, OK if boneless, prob none left
180 # of raw brisket, OK
4.5 cases or 576 pieces of 8 pc chicken, 4 cases plenty; if you pump up the sides a bit, 400 pieces would be sufficient
40# of cooked glazed baby carrots, at least 80 pounds
16-#10 cans of green beans seasoned with my recipe, OK
140# of garlic mashed potatoes(done weight), OK, but I would go with potato salad! Much easier prep and serve and in keeping with the menu

Consider adding 10 gallons cole slaw
Consider 5-6 gallons BBQ sauce as table sauce
Consider adding 4 gallons sliced pickles and 32 pounds sliced onions
Addng 12 gallons of beans, you could cut the beef and chicken about 20 pounds each.
17 gallons of lemonade,
Add 1 pint water per person
Consider adding 10 gallons UNsweetened tea- many people don't do sugar drinks

500 rolls-60 pounds breads/rolls, minimum

Finally have at least 1 large crock pot full of some vegetarian patties, sausages, or other unmeat- you will have some in this size crowd
