Anniversary Party for 50

We are throwing a surprise anniversary party for my in-laws in a friends back yard. We will be doing it buffet style, I have the chafers needed and the home it will be at has an industrial sized oven.
We are having tri-tip, scalloped potatos, salad and dinner rolls.
For the rolls I was getting at least 2 per person depending on the package. Salad for 60? If we did 2 full sized chafers of scalloped potatoes would that be enough?
Also, how much tri-tip should I have? Weight pre-cooked?

Nice party. 2 rolls per person fine. get some butter. 1/2 salad for 100 from the plan for 100 table- it already includes some extra. 2 full size chafers just enough no extra- really full if just 2 1/2 inches deep.

Tritip, very popular, 1 pound per 2 raw, 25 pounds. You might consider doing small half chickens or split cornish game hens in addition, do 10 halves and cut beef to 22 pounds. Not everyone eats beef these days.
