Brunch Buffet for 150

We are self catering a brunch buffet for 150 guests. Can anyone help with amounts for each?

Breads:
corn muffins (mini)
Cinnamon rolls

Main Course:
Egg /ham Breakfast casserole, 9x13"
Blueberry French toast casserole w/ syrup, 9x13"
Link Sausage
Chili & Oyster crackers

Veg:
Spinach salad w/dried cranberries & walnuts
Fresh veggie tray

Fruits:
Fruit tray with fresh Pineapple
strawberries & choc. fountain

Dairy:
Yogurt w/ berries & Granola

Beverages:
cider & grape juice
coffee

Dane, this is a complex menu. Is it a family party or a paid event? The menu needs some work, and the type of party affects flexibility.

I have made some basic estimates, but would not guarantee my usual close results.

Breads:
corn muffins (mini)12 dozen
Cinnamon rolls, get small ones, about 100
3 pounds butter, add honey and jam

Main Course:
Egg /ham Breakfast casserole, 9x13"
Blueberry French toast casserole w/ syrup, 9x13"
9-10 9x13 of each
Chili & Oyster crackers- serve for 60, 4 pounds oyster crackers or saltines would be very traditional, 2 pounds grated cheese

Veg:
Spinach salad w/dried cranberries & walnuts
12 pounds fresh spinach, 2-3 quarts each cranberries and walnut pieces
Fresh veggie tray- I would skip, or serve broiled tomato halves, 1/2 per adult person

Fruits:
Fruit tray with fresh Pineapple
strawberries & choc. fountain

Dairy:
Yogurt w/ berries & Granola, I would put all the fruits on the fruit tray. 3 gallons yogurt, and consider doing vanilla or honey, not plain. 6-8 pounds assorted granola, have at leas one gluten free and labeled.

Beverages:
cider & grape juice- mixed? would do cider and a citrus, rather than grape, use beverage planning page and do each for 100, some left
coffee- use beverage planning page

Thank you! It is a wedding reception. When you say complex, are you thinking there are too many choices? I was thinking a veg tray would be better than the broiled tomato haves because in can be put together the day before and ready to go. We plan to serve our homemade grape juice and one other juice. I very much appreciate your advice! :)

Nobody will eat he veggie tray. Made ahead marinated bean or veg salad, about 3 gallons, would be a make-ahead choice.
Check your oven situation carefully, you have a lot of oven foods-

OK thanks. Can the breakfast casseroles be refrigerated more than just overnight before baking? Say for 36 - 48 hours?

Great! One last question, please. My breakfast casserole (meant to bake in conventional oven in 9 x 13" pan for 45 min. 350*) consists of eggs, ham, bread cubes & cheese. Can a recipe like this be increased and "baked" and served in a large electric roaster? I also have a similar berry French toast recipe. Very appreciative of all your help!

It can take 3-4 times as long to bake and have not enough crust and too much mush if you try to do 4-5x he amount in one roaster. PLEASE see the cooking notes for stratas in roasters on the family brunch page.

Also, you are talking a 4 roaster minimum here, be aware that even 2 roasters on one standard circuit will blow the fuse and turn off every socket on the circuit. You can bake in a standard oven and transfer to a roaster for serving, but since you have 2 dishes and 2 lines, you are still talking 4 roasters. Checkinto sterno chafing dishes.
