Will the internal temperature continue to rise while the bone in rib roast rests? If so by how many degrees? We like our roast medium rare but there are so many variations on what medium rare is, what do you think is the perfect medium rare temperature? What temperature should we pull it at to reach our optimal goal? |

Yes, it rises, prob about 10 degrees depending on how hot it was to start. For lots of beef info: www.ellenskitchen.com/faq/roastbeeftable.html You will get more even medium rare if the roast is at room temp before it goes in the oven. 130F to 140F (55C to 60C) final temp after resting for medium rare. Use a thermometer. |
