04/20/06 		Is this an open face sandwich with gravy? You want 3-4 ounces cooked sliced turkey, 1/4 cup gravy, 1 slice bread per sandwich. If you are serving plates 1 sandwich each with 20 % more for seconds. If it is self serve, people eat more. You want up 50 percent more- 1 1/2 sandwiches per person. You will eat less meat if there are heavier side dishes like beans and potatoes or potato salad instead of just green salad. Happy rest of your life!
