I am doing a roast beef dinner for about 80 to 90 people. How much beef do I need? What is a good vegetable to serve as a side with the beef and mashed potatoes? |

Bev, since just the food supplies for a roast beef dinner run $7-14 per person, you really want o firm up your count. Also, because of the cost of he meat, I always serve 2 veg plus a starch with a roast beef dinner, and you know to serve it plated or att least have someone serve the meat, or you will run out. Basic beef roast meat is 8 ounces raw boneless per person. I like a half grilled tomato as the second veg, looks good and compliments the meat. The first can be whole green beans or Prince Edward mix with yellow and green beans and carrots or Italian medley, or broccoli. Use the plan for 100 list and do 10% less. You can write back.
