Usually with 2 meats, for party portions I purchase 1 pound boneless chicken per 4 plus 1 pound pork or beef per 3. So for 80 people, 20 pounds chicken plus 26-27 pounds pork. The chicken is in modest size pieces, not big chunks. Someone serves the freshly sliced pork. A really interesting chutney orbfruit salsa would be good with this menu. You can write back.
