Class reunion buffet for 40

Hi Ellen. I've been asked to cater a buffet for 40 people. They will be approximately 80 years old (class of 55). They have requested the following:
Stuffed pork loin
Italian baked chicken
Salad
Green beans with red pepper strips
Parsley red potatoes
Rolls/butter
Strawberry trifles
Unsweetened tea
Lemonade
Coffee
Fruit/cheese tray
Vegetable tray
I really have no idea about quantities what with the small amount of people and that age group. Any thoughts would be greatly appreciated

What a nice menu.

Fruit/cheese tray
Vegetable tray
For these, for elders, do 1/3 the amount for 100 from the tray pages

Stuffed pork loin
I would start 14 pounds raw
Italian baked chicken
Get small 3-4 ounce breast pieces or boneless thighs (they are juicier) and do 40.

Salad
With your meat choices, how about doing fried apples or applesauce and an unusual cold veg of some kind, such as roasted summer squashes? Otherwise 1/3 the amount of ant salad for 100, use he dressing guide on he plan for 100 page, and put any nuts to the side

Green beans with red pepper strips
10 pounds ready to cook green beans, maybe some left, 4-6 red bells
Parsley red potatoes
About 14 pounds and get fresh parsley- 3 bunches

Rolls/butter
Get good ones. 5 for every 3-4, depends on size
1 1/2 pounds butter

Strawberry trifles
1 per person, but do about 8 with a non berry fruit such as peach. Some folks this age can't have seeds

Unsweetened tea- about 2 gallons
Lemonade- about 2 gallons
Coffee- do at least 1/2 decaf, use a 12 cup drip, and plan for 2 regular and 3 decaf.

Most seniors eat very well and they often plan to eat a "big meal" if they are going out.
