I am needing to get some info for my sister's wedding reception. We are planning to have stations set up instead of a line.1 is a carving station with ham, turkey, roast beef, rolls, & comdiments.Chocolate fountain, punch, cake, chicken drummettes,& a mashed potoato martini bar. Can you tell me how many potatoes will be needed & how to prepare them in advance if possible. What can we top it with other than cheese, chives, bacon, broccoli? We want the bar to be the highlight of the reception. Can you help me? Do you think we need ceasar salad with it or should this be enough. We are expecting 230 people. How much will we need for the potatoe bar?

Look at the newly posted potato bar for amounts and suggestions about toppings. You want 40 pounds ot potoatoes to make mashed potatoes for 100. Look ae the freezable holdable mashed potato recipe for a recipe that can be made ahead.

People are adding mashed sweet potatoes with honey butter and cinnamon sugar and chopped praline pecans as an option on the bar.

If you lkike, you can offer a choice of roasted garlic or cheddar mashed potatoes. Also, beef tips in a burgundy or mushroom sauce and caviar are two upscale toppings.

French fried onion shreds (as seen on green bean casseroles) is another topping that is good with mashed potatoes.

Please tell me how many pounds of potatoes would it take to make mashed potatoes for 60 people?

Thank you very much for your information,

Rita

25 pounds is about right. Use baking potatoes for the creamy texture people love.

We would like to have a mashed potato martini bar at our rehearsal dinner and have questions as to what to serve with it. Could you give us some suggestions as far as the meats are concerned. Also, have you heard of topping the mashed potato martini with beef, fish, or shrimp?

There is a range of intersting toppings including shrimp scampi and sirloin tips, as well as diced or shredded ham or BBQ, suggested on the baked potato bar page.

You can omit a meat entree entirely if you have 1/2 to 3/4 cup meat topping per person. I would add sauteed mushrooms to the choices if I selected that option.
