Theater group has requested chicken marsala, steamed asparagus, mashed cauliflower, vegetable lasagna, chocolate pie, gluten free pumpkin pie, green salad and rolls. I have recipes for the pies. How much chicken and marsala sauce do I need. I've read your amount for 100. How many people will 1 cauliflower, cooked and mashed, feed? Is it possible to steam asparagus in a buffet server? Any suggestions to steam that much asparagus? I'm guessing 3 asparagus per person. This all will be cooked at home (except the asparagus), transported and served buffet style. |

chicken Marsala Make at least 60 4 ounce pieces. Unless it s a very skinny all female group, quite a few people will take 2 pieces. vegetable lasagna, Because you do not have a carb dish, some people will take the lasagna for the noodles. Make at least 16 servings. Noodles or rice for 24-30 would not be out of place.
