I changed the menu, could you check my amounts please?

Vegetable Tray with ranch dips 3 X your amount
Fruit and cheese tray 3 X your amount
Muffuletta Pasta salad 6 lbs. of dry pasta) – 3lbs
Boudin-(l link will be sliced in fours) 25lbs
Shrimp dip/crackers 2 quarts/6lbs
Spinach dip /crackers 2 quarts/6lbs
Chips and salsa (6 lbs. and 92 oz.-)
Entree:
Mini- crawfish pies 120
Mini- sub sandwiches ham, roast beef, turkey 8lbs each of meat
Variety of cheeses 7 lbs. /120 rolls
7-10 heads of lettuce cored rinsed and broken for sandwiches
12-14 pounds tomatoes sliced
One gallon total sliced olives, pickles and peppers
10 big red - 7lbs
Mayonnaise, 2-3 quarts
Mustard, 18 ounces to 2 1/2 quarts
Beverages:
Sherbet and ginger ale punch 2 punch bowls, 6 gallons
Sweet Tea /Sugar Free Tea 4 gallon/3 gallon
Water with lemon slices (6) Ice 6 bags
Bridal cupcakes -60
Groom cake- half sheet

This is plenty, see note about dips. Consider adding the Mardigras slaw from the site with your sandwiches. Do make the full 6 pounds dry pasta for the pasta salad.

Dips. People LOVE shrimp dip. Each pint serves at most 15. I would suggest 6 quarts of shrimp dip, 4 of spinach.
