Ellen, I’m doing a party for park appreciation. I’m in charge of figuring out amount of food needed to serve 700 people. We’re doing chicken, beef, refried beans, black beans, rice, plus fixings of onion, cheese, salsa,lettuce, quac, black olives...your help would be greatly appreciated. Laurie |

Yikes, the food safety issues are huge! This is literally a half ton of food. I can help wih quantities, in fact have tried to post twice already, but also can you tell me firs how this is going to be stored, cooked, and served, such as buffet, booths, plates, etc. And over what length of time? Also, you don't mention tortillas or chips? Unless you have a big budget, avocado/guacamole is cost prohibitive and VERY hard to store. Are you willing to consider options?
