Rception for Memorial 125
Tina 07/16/19	I am having a reception after a memorial it starts at 11:30 This is the menu we have put together below. we are thinking about 125 attending. Just want to see if my quantities are right or any suggestions would be so appreciated. Sandwiches are going to be premade slider size 6lbs Ham 6lbs Chicken Salad 6lbs beef 160 Rolls condiments on the side Mayo 3 quarts Mustard 1 quart 9lbs sliced Tomatoes 3lbs sliced Red onion 1 lg box spring mix 1 Tray cubed Cheese 3 Veggie Tray serves20 ea 4 Fruit Trays serves20 ea 20lbsPotato Salad 20lbs Pasta Salad 3 lg boxes and 6 heads Romain for green Salad Chips and Salsa Cookies and Brownies Drinks 3 gallons coffee Cream & Sugar Lemonade and water will be in dispensers 4 gallons Water 4 gallons Lemonade Coke 24 12oz cans Diet Coke 24 Sprite 24
ellen 07/16/19	I hope it goes well and is a comfort. I assume most are adults, esp. older adults, as you will not have leftovers. If a young person, add about 10% 6lbs Ham 6lbs Chicken Salad 6lbs beef 160 Rolls condiments on the side Mayo 3 quarts Mustard 1 quart 9 lbs sliced Tomatoes 3 lbs sliced Red onion 1 lg box spring mix (not needed) This suggests there will be none left. Consider adding a gallon of pickles or mixed marinated veggies 1 Tray cubed Cheese- you want about 10-12 pounds, some can be cream cheeses or logs/balls or pimento cheese. Add 6 pounds crackers 3 Veggie Tray serves 20 ea- Ranch dip 4 Fruit Trays serves 20 ea- 20 lbs Potato Salad 20 lbs Pasta Salad 3 lg boxes and 6 heads Romain for green Salad- OK but consider doing 2 1/2 gallons of cole slaw instead- can be made ahead, does not require multiple dressings Chips and Salsa 8 pounds potato or 10 corn chips, about 4-5 quarts dips or salsa Cookies and Brownies 10-12 dozen (2 per person) Drinks 3 gallons coffee Cream & Sugar, have some decaf Lemonade and water will be in dispensers 4 gallons Water 4 gallons Lemonade Coke 24 12oz cans Diet Coke 24 Sprite 24-
Tina 07/16/19	Thank you so much!! your help is greatly appreciated. I am going to add 10% more in case there are younger. so do I add 10% to all food items. Also for 20lbs of Pasta would that be 4 or 5 1lb boxes dry. Thank you again!!
ellen 07/17/19	I usually do 6 pounds dry for 100, so with the potato salad, 5 would be OK.
