Hi Ellen! Thank you for your wealth of info!
Can you check my rough calculations on rotel chicken spaghetti to feed 50? (very simple recipe)

15 lbs raw chicken
8 lbs uncooked spaghetti
4 lbs velveeta cheese
146 oz rotel tomatoes, undrained
6.5 cups chicken broth

Looks OK, plenty. It i is whole bone in chicken, make sure you have at least one piece per person. For this type dish I really like chicken thighs.
You will have precooked the spaghetti, of course. I would chop in a bunch of fresh parsley, 3 tablespoons of dried oregano or Italian herb mix, and top with a mix of grated Parmesan and bread crumbs.
