How much chicken salad as a side is needed for 200 guests? The chicken salad will be served with crackers. Also, other foods will be served. |

1pound boneless, skinless chicken= 2 cups and makes about 4 cups of chicken salad by the time you add in the celery and other good things. 1/2 cup is the usual scoop or small serving, so each pound of meat or quart of made salad serves 8. If you are making it, for crackers be sure the veggies and add ins are fine dice and skip raw onion. You can write back.
