Serving cheese, vegetable platter, hummus ,cqchips and dip first than buffet of 2 salads baked ziti and oven breaded roasted eggplant slices. Followed by dessert. Not sure of how much ziti and eggplant to make. Thinking 12 pounds ziti and 20 eggplants. Dinner is week from tomorrow 3/14 would appreciate your response. Thanks |

OK. For normal eaters, 1 pound pasta plus one quart sauce plus 1/2 to 1 pound cheese per pound. his fills a 9x13 pan. 1 large eggplant makes 4 people's worth, so you may want o increase. Be sure you have excellent bread, including some gluten=free labelled. Consider using Panko bread crumbs, they add wonderful crunch. YOU CAN WRITE BACK.
