luau bbq 5/20 - 1pm for 60

Not sure how to calculate how many pounds of each with a selection of beef, chicken & fish for 60 people. would appreciate your suggestions/thoughts regarding the menu. think i should get chafing dishes? my largest group so far!

menu:

appetizers:
wonton (some pork & some crab)
boiled soy beans (edamame)
chips & dip
shrimp plate

main:
marinated beef (bulgogi)
marinated chicken small-med pieces - no bones
salmon
macaroni salad
corn on the cob
tossed green salad
white rice
brown rice
asparagus

dessert:
cakes from hawaiian bakery
ice cream

You want about 8 ounces total cooked ready to eat meats per person. You definitely need a way to keep hot while serving, health regs are strict. In most states, legally you can't even prepare food away from the site and bring it in for pay without a health dept inspected kitchen...

I would probably go for 3 ounces each beef and chicken and 2 ounces fish, plus 10% extra if self serve.
