My son cannot eat anything containing the above grains. Can anyone please give me a recipe for a bread made out of soya flour or any other alternative. Also a cake. Any suggestions for school packed lunches. Thank you |

Hi, Christine, This sounds like a gluten-free diet or celiac diet and there are several good websites for these. Start with "celiac.com". Bread is a really big problem, you need gluten to use yeast. Two specific ideas. Tofu crisps: drain and press extra firm tofu, slice 1/4 inch or less, bake at 400 for 15 minutes. Makes a pretty good "cracker". After a good look, let me know about specific recipe needs- Ellen Also, you can deep fry 3/4 to 1" tofu slice, darin, cut in half and open the soft pocket in the center and stuff it. |

My daughter is celiac also, and there is a great cookbook by Bette Hagman, called The Gluten=free Gourmet Bakes Bread. Also, we like "Our Favorite Sandwich Bread" mix by THe Gluten-Free Pantry. Also check out 'Cause You're Special mixes--they are wonderful, and become a member of The Celiac Society of America local chapter. Good luck. |
