Please can you help me make a good swiss roll. I used to make them years ago but now I'm unable to find the receipe. I beleive that they do not contain fat, it that so?. Thanks for your help. Carole. |

Hi, Carol, Swiss rolls are sponge cakes, so they are much lighter that regular cake. The trickiest this is the preparing for rollling; there are lots of recipes. They are made on a 15x10 pan lined with waxed paper or parchment paper. You need a piece of cloth bigger than the pan, I use a clean pillow case. Turn the cake over and out onto the cloth, peel off the waxed paper,fold the cloth over one end and roll it up while it is still warm. Then when it cools it can be carefully unrolled, stuffed or jellied, and rolled up again. Let me know what flavor you are trying to find and I will locate a recipe for you. Keep on cooking- Ellen |

It is difficult to make a swiss roll - first you have to find a Swiss who would cooperate to roll down a hill or something... actually it is easier to roll if you cut off the crispy edges thinly first; and incidentally you make a lighter sponge if you replace one or two tablespoons of the regular flour with corn starch - sift them well together first. |

My only suggestion is, make the full sheet of sponge cake, roll the two long halves to the middle so you get two long skinny rolls instead of one fat one, and cut to individual size AFTER stuffing. Don't try to make each one individually. But slices of a full size roll are so pretty! Why make mini's? A Filled cupcake would be the same size and much simpler. Ellen |

Hello,
I used to make a chocolate roll with pepermint whip cream inside and a nice glossy chocolate on the outside and I can't find my receipe. Any chance you have any receipes for chocolate rolls? |

The best chocolate layer and creamy chocolate icing are the ones listed under "Buche de Noel". For a peppermint filling, I would use the cream filling recipe with a bit of pepperment extract and maybe some crushed pepperment candies or a drop or two of red food coloring. |

Mary Ann, EVERYTHING I know about tricks for rolling the cakes is on the three pages I have posted. The towel wrapping trick, etc. Thinner layers roll better as long as they are not overcooked, so use the right size pan. When made into a jelly roll, a common presentation, they have only the thin layer of jam between one roll and the next- pretty tight, wouldn't you say? |

Marnie, which kind of date slices? There are date cakes, date bars, date rolls and date nut breads and they are all sometimes called date slices. With or without nuts? coconut? Coatings or crumbs on the outside? Made with cushed graham crackers? Steamed? Refrigerated? There are a LOT of variations- send more info. |
