Portions for a Wedding of 70ppl

05/24/06 		I'm having to cook for a wedding party for 70ppl and the menu is:
Roast
Ham
Dressing
New Potatoes
Green Beans
Corn
Gravy
Finger Sandwiches
Meat Trays
Cheese Trays
Nuts
Mints
Tea
I need to know how much of each I need to cook to feed all of these people please.

05/24/06 		Micchelle, I do not do these calculations from scratch since I have posted all the tables for these foods in the Big Pots planning section. If you will do your original estimate, PLUS tell me the time of day of the event and the kitchen and serving arrangements (self serve buffet, sit down, etc), I will be glad to check it for you. You can post it here or email it to me at the address below.

05/24/06 		We will be having it at a Dining Hall at a State Park with the Kitchen having Industrial size Appliances and we would like to have it to be an Self Serve Buffet. Possibly the wedding be about 1pm then Reception following.
