Buttermilk raisin bran muffins

05/25/06 		Hi,...i makind the buttermilk raisin bran muffin recipe.
It calls for 15 oz box raisin bran
3 c sugar half brown may be
used
5 c flour
2 T salt
5 T soda
1-2 c oil
4 eggs
1 qt butter milk

My question is...is there anything else i could us intstead of sugar and oil..like applesauce for instance...if so...how much would i use......

05/26/06 		Because of the cost of raisin bran, I worked out this recipe using reglar cheap wheat bran and raisins, it is posted. The sugar and oil help it keep if you are going to hold part of the batter. You can use applesauce for 1/2 the oil if you are cooking the whole batch, the muffins get pretty dense. Also, this is too nuch soda, it will leave a flavor in the muffins. Try cutting in half.
