Thank you. So if you were having 100 ppl, the quanity for 100, you would need 50 lbs of rb and 90 pounds for chicken if you were having 2 entree's? |

64 pounds of chicken pieces or 82 pounds of quarters (more for quarters because of the backbones) is the amount for 100 for chicken only. Ribs only is about 1 pound per person. When I have 2 equal entrees, I make 60% instead of 50% of the amount for 100, as people tend to eat more and to eat some of each. So that would be nearly 60 pounds of ribs plus 36 pounds of chicken pieces or 40 pounds of quarters (I would use pieces). |

How would you go about fixing an 8 pound, whole boneless pork loin. I have never fixed one before. |

Rub it all over with garlic and herbs or a BBQ run or a mixture of honey and mustard. Use a meat thermometer. Roast at 350 for 1 hour, then turn down to 250-275 until the internal temp is just 160. This takes a variable amount of time depending on the shape of the roast, whether it was cold or room temp to start, etc. Remove from oven, let stand at least 26 minutes before slicing. Make baked apples for dessert For an 8 pound roast I allow 4 hors start to finsh, sometimes it takes less. |

Thank you Ellen. I did double post....first time on this site and I got a little confused. The roast is one long piece about 24" long. I'm going to try it tomorrow so I appreciate your help and advice. Thanks again. |

I have a pork loin that is 1lb and 55 ounces and it says to cook the meat at 375 for 20mins per pound how long is that?? |

Crystal, I assume you mean 1 pound 5.5 ounces, which is 1 1/3 pounds26-28 minutes. PREHEAT the oven. |

Not everyone parboils ribs. You need to decide why you are parboiling- usually to remove fat, or to tenderize larger older ribs. But it does also remove flavor. So, use a seasoned broth- such as part beer, or apple juice, or crab boil, etc. Boil (actually, though, simmer)about 10 minutes. |
