Using Pam

If I am doing something like baking cookies or a pizza and it says to use an ungreased cookie sheet, is it okay to spray Pam on the sheet? I have always done this so things won't stick to the pan, but a friend tells me I am wrong that using Pam is greasing the cookie sheet.

Pam is a spray-on oil, so you are greasing the cookie sheet. However as you have probably noticed, it rarely has a bad effect. Ungreased usually means, you don't have to" not "You must not... "
The only time you must not grease, is when the item needs to hold on the pan to spread or climb, such as an angelfood or sponge cake.
By the way, has your friend been drinking too much coffee?

i would argue that there are other times you don't want a greased cookie sheet - it can cause the bottoms of your cookies to burn or gain a texture you weren't looking for!
if you really want to cook healthy and easy, use a Silpat on your cookie sheets. it's the only way to cook for chef's and now it's available at williams/sonoma and others. it sure makes for super easy cleanup too!

I agree that these new silicon baking utensils are fabulous, but they are also very expensive, and many readers cannot afford them. So thanks for reminding us about this wonderful fat-free alkternative.
