My daughter is having a fund raiser Indian Taco feed. We are uncertain of the amount of people being served as its on a National guard base. So lets just say for 300. What would you suggest the quantity of ingredients of: lettuce,shredded cheese,onions,black olives,diced tomatoes,salsa we are cooking the fry bread the night before, do you have a suggestion for storing this. And what can we do so it doesn't get hard,soggy or spongy? This is for Friday June 16, Thank you so much for a speedy response |

I do not have any tips for storage of the bread. If I remember correctly from Neshoba county days, an Indian taco is about twice as big as a regular taco. Use the taco planning guide for 600 regular tacos to make 300 and you will have plenty. |
