I am making spagetti for about 250 I am serving meat sauce, marinara, and alfredo. Also serving grilled chicken cut into pieces. The only meat sauce recipes I find seem like they don't include enough meat if you go by the regular 30-35 lbs meat per 100 people. I want to have a nice meat sauce that has lots of meat. I dont want to be chintzy, I want to spoil my crowd, how much meat should I use and do you have a recipe? any help would be sooo appreciated. Thanks. |

Around 20-25 pounds of ground meat makes a good meaty sauce if it is loose, not meatballs. A reader just posted a recipe for a hearty meat sauce for 1000 in the "Breaking down large recipes thread, a few slots below this one on the main forum page. Consider using 1/4 of this recipe. |

One pound of cooked pasta is for how many people? |

I can only tell you in dry; about 7 pounds for salad for 100, about 1 pound for 6 as a side dish, about 1 pound for 4 as an entree. Varies a bit with type of sauce, whether or not self service, and what else is served- for example, serve eggplant parm and plenty of gar;ic bread, and the amount of pasta goes down. |

Use the baked spaghetti recipe in basic budget entrees in big pots. |
