Making potato salad ahead

I have a great recipe that starts with Italian dressing. Would this work for making the potato salad ahead?

Wednesday - Boil red potatoes with skin on, cubed, drain. Pour Italian dressing on them while still hot. Refridgerate covered
Thursday - mix in mayo, mustard, celery and other spices. Refridgerate.
Friday - Serve.

ok..thanks.
going to do the trick of freezing some water in a ziplock bag and putting it inside the bowl with the potato salad on top when i am serving it.
