I am having a fund raiser at the University of Missouri Homecoming (October 21) for a fraternity brother who is dying of brain cancer. I plan on feeding 100-150 people from the north who have never eaten good southern BarBQ. (I'm from Memphis) I plan on serving pulled pork shoulders for sandwiches, pork baby back ribs and fried turkey as the main venue. This is the first time I have ever done something like this and I would appreciate any input as to the total pounds of shoulder and ribs. I am planning on doing 6 14-15lb fried turkeys. Thanks |

Hi, Bill, Good work. Your turkey alone will provide 90 full meat servings or more. I suggest you do just one other meat- and the pork shoulder is easier and cheaper by far than the ribs. Allow 1 pound bone in raw to prepare for each 3 to 4 sandwiches. Please look at my good slaw, pasta and potato salad recipes. The side dishes can be made ahead- see the "making pasta salad ahead safely" thread just posted a few days back. They are the key to a lower cost. People will donate extra for their beer and beverages at this type of event. |
