Hi Ellen I'm praying your knees will be good as the day you were born:) I am wondering what you would suggest for a wedding that we're doing for a friends daughter. The menu is for 120 adults and 10 children under 10. We are having a bbq of hamburgers and smokies, bbq chicken drums and thighs, 4 salads, broiled garlic bread. For amounts of meat what would you suggest? Also for condiments like grilled pineapple rings, ketcup, relish mustard mayo, tomatoes lettuce, fried onions and mushrooms and saurkraut for the smokies?? Could you please help? If people want garlic bread and chicken along with their salad, how many pieces? We have alot of large cookie trays and were thinking to do foccacia triangles and keep them comimg hot out of the oven since we have a large set of ovens. The wedding is Sept 1. P.S. Thanks. Knee #1 is not quite as new but much much better than it was. Knee number 2 is still waiting its turn. This is a nice size for this party. If they are big eaters, you might create a "fudge factor" by just counting the kids as full persons. To estimate meat amounts, you want about 5 to 6 ounces of cooked, ready to eat meats plus 1 piece of chicken for each person. I can't help on the burgers vs smokies split- you know the group better than I do. If I had lots of oven space for this, I might add a pan of ovenbaked rice pilaf or roasted red potatoes as a filler. On the meatballs for 25 page there is a really good garlic bread recipe which will help you estimate the bread amounts. On the sandwich event page there is a good table for sandwich condiments. On the fried onions and mushrooms, I suggest you make an experiment: cook up a pound of each in your usual way and decide how many servings that is, then just multiply. |
