I tried the Instant Tapioca by Reese ( first try ever with tapioca ) and it came out really runny. Even the next day it was milk consistancy. what might have gone wrong? I used Lactaid milk for it. Is there a cure for this when I make it again if its the milk. Thanks |

Too much milk. The Lactaid should not make a difference. Reduce the amount of milk about 1/4. If it doesn't do what you like and you come out too runny, make a mixture of 2 tablespoons cornstarch in 1/4 cup milk, mix in, and reheat until it bubbles- it will thicken. |

Here is Alton Brown's tested crock pot recipe. I simplified his directions slightly. This only makes about 6 servings. You can double or triple this recipe for a 6 quart crock pot. It is not very sweet. People add jam, canned fruit, dates, aor more sugar.
Tapioca Pudding Place tapioca in a medium mixing bowl along with the water, cover, and let stand overnight. Drain water from tapioca. Place the tapioca into a slow cooker along with the milk, heavy cream, and salt. Cook on high for 2 hours, stirring occasionally. In a small bowl, whisk together the egg yolk and sugar. Mix small amounts (1-2 tablespoons)of the hot tapioca into the egg mixture until you have added at least 1 cup. Then add the egg mix back into the remaining tapioca in the slow cooker. Add the lemon zest and stir to combine. Cook for an additional 15 minutes, stirring at least once. Transfer the pudding to a bowl and cover the surface with plastic wrap. Allow to cool at room temperature for 1 hour and then place in the refrigerator until thoroughly chilled. |
