I have been trying to purchase diastatic and non-diastatic malt powder as mentioned in your recipies for bread making. I found "malt powder" at bulkfoods.com. Is their malt powder what you mean by diastatic malt powder. You explained why and when I use diastatic vs non-diastatic but what does the "diastatic" mean when speaking about malt powder. Thanks. Diastatic refers to the enzymes produced when the grain is sprouted. Non-diastatic acts as a sweetener, but not such enzyme activity. |
