Hi Ellen, I need help feeding my husband's football team! I bought a bunch of frozen french fries when they were on sale and would like to spruce them up for the team meal next week. I found a recipe for cheesy potatoes where you blend 1 can of cheddar cheese soup, 1/4 cup milk, & spices with 4 cups frozen french fries. I'm supposed to wrap one cup in a foil packet and bake in 350 oven for 25 minutes...so this recipe makes 4 packets (4 servings). I have to feed 60 people...any way around the tin foil packets, you think? I don't mind using the oven but was wondering if I could make larger packets of 4 cups fries in each...or do you think that would mess up heating times? Would also consider using a roaster. I've never made the recipe before. Thanks! |

I would make the fries separately and serve crock pots of chili and queso dip. Much tastier. You can make the fries on big sheets- easy- no foil. |

Okay thanks, Ellen. I will make the fries separately...I just worry about keeping them all warm and not too dry for a crowd...the menu is grilled Italian chicken breast sandwiches, fries, fruit and vegetable. Still trying to think of an easy fruit and vegetable that high school boys will eat! Any ideas are welcome! |

Fruit salad with frozen peaches, fresh or frozen strawberries, and tiny marshmallows. Tangerine bits (canned) if you want, maybe shredded coconut. Most of the guys will happily eat broccoli with cheese sauce. That's why it appears on so many commercial buffets. |
