I am fixing lunch for our christian school. We have 60 students and 13 staff. I am serving sloppy joe and macaroni and cheese. How much ground beef, uncooked macaroni noodles and block cheese do I need to feed 100? |
ellen 10/04/06 |
There are quantity tables and recipes for 100 for both these items on the website (big pots section). Unless this is a high school, you will not need the full recipe. If it is mixed grade elementary-junior high, 3/4 of the recipe would be plenty. |

I am hosting a 70th wedding reception for a couple at my church. Most of the attendees will be elderly people. The son wants me to serve fruit and vegetable trays. There will be approx. 100 guests. How much fruit/vegetables do I need? Thanks! |
ellen 10/13/06 |
These elderly folks are not big raw carrot eaters. You can do nice fruit trays (I would expect my fruit tray for 25 to serve 30-35, would make 3 instead of 4). Then consider some marinated vegetables (Italian antipasto style, artichoke hearts, mushrooms, olives, and others partially cooked to tenderize) instead of raw veggies for the veggie trays. Or perhaps a bruschetta (chopped veggies). About 2 ounce per person woill probably be plenty. |

I am hosting our church's Thanksgiving dinner this year. I am planning for 100 guests. How much turkey, dressing, gravy, mashed potatoes, candied yams, green beans, and lima beans will I need? This is my first year in this new church and I really want to get this right. Thank so much! |

You are in luck! All of this- shopping, cooing, serving- is covered in detail in the holiday cooking section of the Big Pots page. |

I'm getting the cheese and peperoni for a party of 100 teenagers how do you decide how much cheese you need? |
ellen 10/18/06 |
For pizza or for meat and cheese trays? If this is a longer party (3 hours or more) I would allow at least 12 pounds of cheese and 20-25 pounds of sausage. Deli-sliced ham or ham cubes are a good alternative, and usually less expensive. |

My church is serving about 150 people collards, corn fritters along with grilled chicken and string beans. I am in charge of preparing the string beans. How many large cans of string beans do I need to prepare? |
ellen 11/03/06 |
Mmmm, I could go for that plate. Be sure to have syrup and spinklers of powdered sugar for the fritters. I have discussed your veg quantities on the plan for 100 page, but suggest you consider my better green bean casserole for 60, make 2 1/2 times for 150 people. It would be great with these dishes- a step up from green beans plain, easy, and delicious with grilled meats. |

I am catering a party for a friend of mine. There is going to be about 80 people. Here are some of the items I am serving: Meatballs(2 kinds), chicken salad cups, croissant sandwiches, vege tray, chicken legs, and fruit for a choc. fountain. I am having trouble deciding how much I should make. Can you give me some tips? |
ellen 03/03/07 |
Is it a suppertime party? See the appetizer page for the discussion of the issue of how much food. There is a whole article on chocolate fountains, including the discussion of dippers, and one on veg trays also. You will need one full time person just to tend the fountain and should have at least one other helper for the food. |

I am having a party with 125 people. I was thinking of serving salad, turkey, ham, mashed potatoes, green bean almondine and some kind of pasta, maybe baked ziti. How many turkey breast, spiral hams will I need? How many pounds of potatoes and green beans will I need? Do you have a good recipe for a baked ziti? Also, do you have an easy suggestion for tossed salad? I will have two days to get this all together and I will be transporting it for a 30 minute drive. |
ellen 03/10/07 |
The shopping list for turkey dinners and all the sides is in the holiday cooking section in big pots. You do not have time to thaw the turkeys! Use the water in the sink or ice chest method or cook from frozen. For ham and turkey, get 3/4 pound raw whole turkey per person plus 2 pounds boneless ham for each 6-7 persons, or 2 pounds bone in for each 4-5 persons. Salad info first section of plan for 100. See the mostaciolli and sausage recipe in lotsa pasta and use for the ziti. |
